A Quick Healthy Best Gift Ever … To Pay Forward (Check Out This Cookie-In-A-Jar Recipe)

Good morning!

I’ve got a fun and delicious gift for you today … and it’s a gift you can give in any of the holiday festivities on your holiday list that you will be attending (and want to bring something which is health-conscious).

It’s a vegan and paleo-friendly cookie mix! vegan; paleo; chocolate chip cookie; chronic pain

You can make it yourself – or you can layer the ingredients in a mason jar for a fun and festive holiday gift.

I mean, who doesn’t love cookies?

Especially when they taste amazing AND they also happen to be healthier than your average chocolate chip cookies.

They’re gluten-free, lower in sugar and carbs, and higher in fiber than traditional cookies! Plus, depending on your ingredients, they also can fit into a Paleo or Vegan lifestyle.

How To Create this Quick “BEST GIFT EVER” For Family Or Friends

When you give these cookies as a “cookies in a jar” gift, they require absolutely no baking on your part. Just layer the dry ingredients in a mason jar, securely cover the jar, add a “how to bake” gift tag and a ribbon and voila! You’re done!

You can give these as a gift for gift exchange, stocking stuffer, or a fun present for anyone who enjoys a healthy and sweet treat.

Chocolate Chip Cookies in a Jar (Paleo/Vegan)

(makes 20 cookies)

    • 2½ cups (240g) almond meal
    • 3 tbsp (22g) coconut flour
    • ½ tsp (2g) baking soda
    • ⅔ cup (66g) coconut sugar
    • ½ tsp(4g) sea salt
    • 1 cup (175g) dark chocolate chips
Layer ingredients in a one-quart (one-liter) mason jar. Seal the jar.

Add a gift card with the following baking instructions:

    1. Preheat oven to 350ºF (175ºC) and line a baking sheet with
      parchment paper.

    2. Place the jar contents into a large mixing bowl, and add:
    3. 6 tbsp (85g) melted butter or coconut oil
    4. ¼ cup (60ml) water (or your fave dairy-free milk)
    5. Mix well. Scoop the batter out of the bowl by tablespoon and drop
each ball onto the baking sheet. Gently flatten, and then bake for
12-15 minutes until the edges begin to turn golden brown. Let cool
      on baking sheet.

Recipes like this are proof that it’s totally possible to enjoy an occasional treat while living a healthy lifestyle, even if you have a chronic pain or chronic health condition (or if you know someone that does, please pass this to them, or better yet, surprise them with this gift!)

I hope you enjoy this recipe 🙂
